"CAJUN" RED BEANS AND RICE 
1/2 lb. red beans (soak overnight)
1/2 lb. chopped sausage
1 lg. yellow onion
3 stalks celery
1/2 green pepper
1 tbsp. parsley
2 bay leaves
2 cloves garlic, crushed

Cover above with water and simmer 2 hours with lid off. Add: Pepper to taste 1 shot Tabasco (stiff shot) 1 tbsp. Worcestershire sauce

Cook an additional hour. Cook rice separately and serve beans over rice.
