CAJUN RED BEANS AND RICE 
1 lb. fried red kidney beans
2 to 3 strips salt pork
2 c. chopped onion
1 c. chopped green onion
1 c. chopped fresh parsley
1 tbsp. garlic salt
1/4 tsp. dried whole oregano
1 tsp. red pepper
1 tbsp. Worcestershire sauce
1 tsp. pepper
1 1/2 tsp. hot sauce
1 (8 oz.) can tomato sauce
1 lb. smoked sausage, cut into 2 to 3 inch pieces
Hot cooked rice

Wash beans, place in large pot, cover with water over beans; let soak overnight. Add salt pork to beans, cover and simmer 45 minutes. Stir in next 10 ingredients and cook on simmer for at least 1 hour.

Brown sausage, drain and add to mixture. Cover and simmer 45 minutes. You may need to add more water. Serve over rice. Serves 8.
