RED BEANS AND RICE 
1 lb. red kidney beans (soaked overnight)
1 qt. water
1 meaty ham bone or white bacon
1 lb. hot sausage, thinly sliced
2 c. chopped onions
2 celery stalks, chopped
1 bunch green onions, chopped
4 bay leaves
Pinch thyme
1 tbsp. cumin
1 tbsp. Old Bay seasoning
1 tbsp. sage
1 tbsp. chili powder

Rinse beans thoroughly after soaking. Place in large skillet, add water. Add remaining ingredients except salt and pepper and bring to a boil. Reduce heat. Simmer about 3 hours. With wooden spoon mash about 1/3 to 1/2 of the beans against side of pan. Season with salt and pepper and serve with hot sauce if desired. Serve over cooked rice.
