RED BEANS & RICE 
1/2 lb. raw red beans (soak overnight)
1 lg. onion, chopped
1/2 c. green pepper, chopped
1 tsp. parsley
1 c. cubed ham
1/2 c. celery, chopped
1 bay leaf
1 garlic clove, crushed

Cover with water and cook in pot and cook or simmer 2 hours, then add: Salt, pepper & other seasonings to taste

Cook 1 more hour. Serve over rice.
