CAJUN RED BEANS AND RICE 
1 lb. red beans, soaked overnight
2 lbs. pork sausage, cut into 1 inch pieces
3 med. onions, chopped
1/2 bell pepper, chopped
Hot sauce to taste
Salt and pepper to taste

In a large pot, brown the sausage. When the sausage has produced some juice add the onions and bell peppers. When the onions are clear add the garlic and the beans and the water they were soaked in. Add enough water to cover everything by 2 inches. Simmer until beans are tender, stirring occasionally. Add hot sauce and salt to taste. Serve with rice and French bread.
