BEEF ROULADEN 
4 slices slab bacon, chopped
1 1/2 lbs. round steak, thinly sliced (12/4 inch thick)
2 tbsp. mustard
1 onion, chopped
2 tbsp. parsley, chopped
Salt
Pepper
Paprika
2 tbsp. shortening
1 tbsp. flour
2 tbsp. sour cream

Cut meat into 4 pieces. Beat meat, salt, pepper, meat and put paprika on it. Take chopped slab bacon, chopped onion, parsley and mustard and spread on meat. Roll up meat and tie it with thread or use toothpicks. Turn beef rouladen in flour and brown in hot shortening. Thin with water and cook (simmer) for 30 minutes. Take out and remove thread. Add flour and sour cream to leftover drippings. Use as sauce over mashed potatoes and eat with tossed salad.
