BARLEY CASSEROLE 
6 tbsp. butter, divided
1/3 c. pine nuts or slivered almonds
1 c. barley
1 onion, chopped
1/2 c. minced fresh parsley (1 tbsp. dried)
1/4 c. minced chives or green onions
1/4 tsp. salt
1/4 tsp. pepper
3 1/2 c. beef or chicken broth

Preheat oven to 375 degrees. Grease 3 pint casserole. In saucepan, melt 2 tablespoons butter. Add nuts and stir fry until lightly toasted. Remove nuts. Add remaining butter and saute barley and onion, stirring constantly. Remove pan from heat, stir in nuts, parsley, chives, salt and pepper.

Spoon into casserole. Heat broth to boiling and pour over barley mixture, stir. Bake for 1 hour, until barely tender and liquid is absorbed. Serves 6.
