BARLEY CASSEROLE 
1 c. barley (uncooked) browned in butter
2 cans onion soup
1 (4 oz.) can sliced mushrooms with juice or use fresh mushrooms
Cheddar cheese, grated

Combine all ingredients except cheese in a casserole dish. Cook, uncovered, at 350 degrees for 1 hour or until liquid is gone. Sprinkle grated cheese on top while hot. Serve when cheese is melted.
