VEGETABLE-BARLEY CASSEROLE 
3 tbsp. butter
2 green peppers, cut into strips
1 env. beef flavor bouillon
3 sm. zucchini, cut into 1" chunks
1 (14 oz.) can cut green beans
1/2 head cauliflower, cut into sm. flowerets
Carrot, sliced
1 garlic clove, crushed
2 med. onions, sliced into rings
1 c. barley
3 tomatoes, quartered
1 (10 oz.) pkg. frozen peas
2 tbsp. lemon juice
1 tsp. paprika

Cook onion and green pepper in butter until tender and slightly brown. In a 9"x13" pan, combine barley, bouillon and 2 cups water. Add carrots, tomatoes, zucchini, green beans, peas and cauliflower. Top with onions and green pepper. Combine lemon juice and garlic. Pour over vegetables. Sprinkle with paprika. Bake in 400 degree oven for 1 1/2 hours. Serves 12.
