PEPPERED CHICKEN 
1 chicken, cut in 1/4ths
1 bell pepper (green)
1 bell pepper (red)
1 lg. onion, chopped
1 can of pimentos
Mushrooms (if desired)
2 tbsp. cornstarch
Salt and pepper to taste
1 stick of butter

Wash chicken, put in baking dish, add salt, pepper and butter (melted). Bake in oven at 325 degrees or until tender. Saute peppers, onions, mushrooms until tender. Mix cornstarch in 1/2 cup of water. Pour over chicken, cook until slightly thickened, then add vegetables and spoon over chicken. Cook for 10 minutes until season goes through chicken. May be served over rice or noodles.
