CHICKEN MEDLEY 
1 hen (3 lbs. or larger)
2 med. onions, diced
1 green pepper, diced
1 clove garlic, minced
2 tbsp. butter
2 (16 oz.) cans stewed tomatoes
1 tsp. salt
1/2 tsp. pepper
1 tsp. thyme (powdered)
1 tsp. curry powder
4 oz. slivered blanched almonds, toasted
1/2 c. raisins

Stew hen. Remove meat and dice. Saute onions, peppers and garlic in butter. Add tomatoes and cook 10 minutes. Add salt, pepper, thyme and curry. Cook 5 minutes more. Pour sauce over chicken and bake 45 minutes at 325 degrees. When ready to serve add almonds and raisins. Serve with wild or brown rice.
