BANANA-WALNUT-PUMPKIN LOAF 
4 ripe bananas
6 eggs
2 c. sugar
1 1/2 c. pumpkin
2 tsp. lemon juice
2 c. flour
3 tsp. baking powder
2 tsp. ginger
1 tsp. nutmeg
2 tbsp. cinnamon
1/2 tsp. salt
2 c. chopped walnuts

Beat eggs 5 minutes on high speed. Beat in sugar, add pumpkin, mashed bananas, and lemon juice. Sift together dry ingredients. Fold into pumpkin and banana mixture. Pour into several loaf pans. Bake at 375 degrees for 20 minutes or until toothpick inserted in the middle comes out clean.

OPTIONAL: Top with cream cheese filling or frosting. Beat 1 cup powdered sugar, 6 oz. cream cheese, 4 tablespoons butter, and 1/2 teaspoon vanilla.
