GRAMMAS HOMEMADE PUMPKIN LOAF | |
1/2 c. vegetable oil 2 eggs 3/4 c. sugar 3/4 c. pumpkin or squash puree 1/2 c. chopped cranberries, raisins, or walnuts (optional) 1/4 tsp. salt 1 tsp. baking soda 1 tsp. baking powder 1/2 c. flour 1 tsp. cinnamon In large bowl, beat together the sugar, oil, pumpkin, and eggs. In medium bowl stir together the flour, baking powder, baking soda, cinnamon and salt. Add to the pumpkin mixture, stirring the two mixtures together just to moisten the dry ingredients. Stir in the cranberries, raisins or nuts. Pour the batter into a greased 9 x 5 x 3 inch loaf pan. Bake at 350 degrees for about one half hour or until a toothpick comes out clean. |
