PUMPKIN CHOCOLATE LOAF | |
1 (29 oz.) can solid pack pumpkin (I use Libby's) 3 1/2 cups sugar 1 1/4 cups vegetable oil 3 eggs 3 (1 oz. ea.) sq. unsweetened chocolate, melted and cooled 1 1/2 tsp. vanilla extract 3 3/4 cups all-purpose flour 1/2 tsp. nutmeg 1 1/2 tsp. salt 1 1/2 tsp. baking soda 1 1/2 tsp. baking powder 1 1/4 tsp. cinnamon 1/2 tsp. cloves 2 cups chocolate chips Preheat oven to 350°F. Grease three 9x5x3-inch loaf pans. Set aside. In a large bowl combine sugar and oil. Add eggs, mix well. Stir in pumpkin, chocolate and vanilla. Mix well. Combine dry ingredients. Stir into pumpkin mixture just until blended. Finally, stir in chocolate chips. Pour into prepared pans. Bake at 350°F for 55 to 65 minutes or until toothpick comes out clean. Cool.
