PUMPKIN WALNUT LOAF 
3 1/2 c. sifted all-purpose flour
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
2 c. sugar
1 (16 oz.) can pumpkin
1 c. pure vegetable oil
2/3 c. water
2 lg. eggs
1 c. chopped walnuts
2 c. seedless raisins (optional)

Heat oven to 350 degrees. Grease and flour two 9x5x3 inch loaf pans.

Sift together flour, baking soda, salt, cinnamon and nutmeg. Set aside.

In large bowl, combine sugar, pumpkin, oil, water and eggs using electric mixer on medium speed. Gradually add flour mixture. Mix well. Stir in walnuts and raisins.

Pour batter evenly into prepared loaf pans; bake 1 hour or until wooden pick inserted in center comes out clean. Remove loaves from pans onto wire rack; cool. Makes 2 loaves.
