CRISPY BAKED FILLETS 
1 lbs. fish fillets
Freshly ground black peppers
2 tbsp. oil
1/3 c. cornflake crumbs

Wash and dry fillets and cut into serving size pieces. Season, dip in oil, and coat with cornflake crumbs. Arrange in a single layer in a lightly oiled shallow baking dish. Bake at 500 degrees for 10 minutes without turning or basting. Yield: 4 servings.
