WARM CINNAMON STREUSEL CAKE 
2 1/2 c. multi-bran cereal Chex, crushed to 1 c., divided
1 c. all-purpose flour
1/2 c. + 1 tbsp. sugar, divided
1 tsp. baking powder
1 c. skim milk
1/3 c. cholesterol-free egg product OR 1 egg, beaten
1/2 tsp. vanilla extract
1 tsp. cinnamon
Applesauce, optional

Preheat oven to 350 degrees; coat square or round pan with non-stick cooking spray.

In large bowl combine 2/3 cup cereal, flour, 1/2 cup sugar and baking powder. Add 1/4 teaspoon salt if desired. Set aside.

In a small bowl combine milk, oil, egg product and vanilla. Add to reserved cereal mixture all at once. Stir until combined. Pour into prepared pan, set aside.

In a small bowl combine remaining 1/3 cup cereal, remaining 1 tablespoon sugar and cinnamon. Sprinkle over reserved cake batter. Cut through batter with knife to swirl. Bake 30 to 35 minutes. Serve with warm applesauce if desired. Makes 9 servings.
