STIR-FRIED FLANK STEAK AND
BROCCOLI
 
1 lb. flank steak
4 tbsp. soy sauce
4 tsp. cornstarch
2 tsp. oil
2 lb. fresh broccoli
1/3 c. water
1 tbsp. oil
4 tsp. minced fresh ginger
1/4 tsp. crushed red pepper

Trim steak of any excess fat. Slice across the grain in very diagonal slices, about 1/8 inch thick. Then cut slices into smaller rectangles. Combine the soy sauce, cornstarch and 2 teaspoons oil. Toss meat in mixture. Wash broccoli. Remove flowerets from stalks. Cut into serving size. Trim stalks of tough skin. Slice diagonally into thin pieces. Heat browning dish at HIGH power for 6 minutes. Coat with 1 tablespoon oil. Add ginger, red pepper and meat. Stir to combine. Microwave at HIGH power for 2 to 3 minutes until done. Stir once. Keep warm. Place broccoli in a microsafe 3 quart casserole with water. Cover tightly. Microwave on HIGH power for 6 to 8 minutes until crisp-tender. Stir 2 to 3 times. Drain. Toss broccoli with the steak. Serve.

Since microwave ovens vary in power, you may need to adjust your cooking time.
