COCONUT CREME DELIGHT 
60 Ritz crackers
1 stick butter
1/2 gallon vanilla ice cream
2 (3 oz.) pkgs. coconut cream instant pudding mix
1 1/2 c. milk
9 oz. Cool Whip

Crush crackers. Reserve some for topping. Pour rest into a 9 x 13 inch pan. Melt butter, pour over crumbs and blend. Press in bottom of pan only. Pour milk into softened ice cream. Add instant pudding mix and beat until thoroughly mixed. Pour over crumbs. Refrigerate until firm. Then spread Cool Whip on top and sprinkle with cracker crumbs or coconut. Serves 12 to 15 people.
