COCONUT DELIGHT CAKE 
1 box yellow or white cake mix
1 egg
1 (12 oz.) bag of frozen coconut, thawed (room temp.)
1 stick melted butter
1 c. chopped pecans
2 eggs
1-1/2 tsp. vanilla
1 (8 oz.) cream cheese (room temp.)
1 (1 lb.) box powdered sugar

By hand mix together cake, flour, melted butter and 1 egg. Press mixture into a 9 x 13 inch pan. Add layer of coconut, then a layer of chopped pecans. With electric mixer, mix together cream cheese, 2 eggs, powdered sugar, and vanilla. Spoon this over top of coconut and pecan layer. Bake at 350 degrees for 35 minutes or until light brown; cool. Leave in pan, cut in squares.
