COCONUT CREAM ICE CREAM DELIGHT 
60 Ritz crackers, crushed
1/4 lb. melted butter
1/2 gal. vanilla ice cream, partially thawed
2 sm. boxes coconut cream instant pudding
1 1/2 c. milk
Toasted coconut
8 oz. Cool Whip

Mix crushed crackers and melted butter together. Press into 9 x 13 inch pan. In large mixing bowl add ice cream, pudding and milk. Beat for 4 minutes. Pour into crust. Refrigerate for 1/2 hour. Spread Cool Whip over mixture. Top with toasted coconut. Freeze. Thaw 1 hour prior to serving. (Many times I add 1/4 cup coconut to the ice cream, pudding and milk mixture).
