CRANBERRY APPLE CAKE 
2 c. flour
1 tsp. each baking soda, salt, cinnamon, nutmeg
1 3/4 c. dark brown sugar
1/2 c. oil
2 eggs
1 tsp. vanilla
2 c. cranberries, coarsely chopped
2 c. peeled, chopped apples
1 c. chopped walnuts

Preheat oven to 350 degrees. Spray 10 cup bundt pan with Pam. Beat brown sugar, oil, eggs and vanilla with spoon to mix well. Mix dry ingredients separately and add. Stir in cranberries, apples and walnuts. Spread in pan. Bake 1 1/2 hours. Cool in pan 30 minutes. Remove and cool completely before serving.
