ALL BRAN MUFFINS 
1 1/4 c. all-purpose flour
1 tbsp. baking powder
1/4 tsp. salt
2 tbsp. sugar
2 tbsp. vegetable oil
2 c. All Bran cereal
1 1/4 c. skim milk
Egg substitute to equal 1 egg

Stir together flour, baking powder, salt, and sugar. Set aside. Measure All Bran and milk. Pour into large mixing bowl. Stir. Let stand 5 minutes. Add egg substitute and oil. Beat well. Add flour mixture, stirring only until combined. Portion into 12 greased 2 1/2 inch muffin pan cups. Bake at 400 degrees until a toothpick inserted in a muffin comes out clean.
