POTATO CASSEROLE 
2 pkg. (24 oz.) frozen hash browns
1 pt. half and half
1/2 lb. Velveeta cheese
2 sticks butter
1 tsp. salt
1/4 lb. Cheddar cheese

Remove potatoes from freezer and thaw completely. Crumble thawed potatoes into a 9 x 13 inch dish. In a saucepan place half and half, Velveeta cheese, butter and salt stirring constantly until cheese is melted.

Pour warm sauce over potatoes. Mix lightly with a fork in the baking dish to be sure the potatoes are separated and mixed with the sauce.

Sprinkle the grated Cheddar cheese over top and bake at 350 degrees for 1 hour and 15 minutes, uncovered. Makes about 16 servings. This warms up great in the microwave and is also good with breakfast.

Since microwave ovens vary in power, you may need to adjust your cooking time.
