1 1/2 c. flour 1 tsp. baking powder 1/2 tsp. salt 1 c. sugar 1/4 c. cocoa 1 c. water 1/3 c. vegetable oil 1 tbsp. vinegar 1 tbsp. vanilla 1 (8 oz.) cream cheese, softened 1 egg 1/2 c. sugar 1/8 tsp. salt 1 (6 oz.) pkg. semi-sweet chocolate mini morsels Combine first 5 ingredients in a large bowl. Make a well in center of mixture. Combine water, oil, vinegar and vanilla. Add to dry ingredients, stirring well. Spoon batter into paper-lined miniature muffin pans, filling 2/3 full. Combine cream cheese and next 3 ingredients, stirring well. Stir in chocolate morsels. Spoon about 1 teaspoon cream cheese mixture over chocolate batter. Bake at 350°F for 10 to 15 minutes. Yield: 5 dozen. |
