COCONUT CAKE 
6 eggs (save 3 egg whites)
1 stick butter
1 1/2 c. sugar
2 c. all purpose flour
1/2 c. buttermilk
Pinch of soda
3 tsp. baking powder
2 tsp. vanilla

Mix ingredients together. Grease and flour pans. Make 3 layers. Bake 20 minutes at 350 degrees.

ICING:

2 1/2 c. sugar
1 med. bag coconut
2 tsp. lemon flavoring

Add a little water to sugar (use only a very small amount to dissolve the sugar). Cook about 5 minutes over medium heat. Test a small amount in a cup of cool water until it forms a soft ball as you would test candy. Put coconut in; beat egg whites and fold in mixture. Cook 5 minutes stirring constantly. Set pan in cool water. Add 2 teaspoons lemon flavoring. Cool. Ice cake.
