BREAD PUDDING 
7 oz. (about 6 c.) stale French bread
3 whole eggs
3 egg yolks
1 3/4 c. sugar
4 1/2 tbsp. vanilla extract
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1/2 c. unsalted butter, softened
4 c. whole milk
1/2 c. soaked raisins

Place the bread into cubes or crumbled in an ungreased 13 x 9 inch baking pan. In large mixing bowl combine whole eggs and egg yolks and beat until frothy. Add the sugar, vanilla, cinnamon and nutmeg. Blend well. Add softened butter and mix. Add milk and continue to stir. Sprinkle raisins over the bread and then pour the mixture over the bread. Allow it to absorb the liquid and become soaked. Bake in 350 degree oven for 40 minutes. It will rise, then deflate and end up slightly higher than uncooked pudding. Allow to cool slightly. Makes 6 to 8 servings.
