CHICKEN CORDON BLEU, ITALIAN
STYLE
 
1 1/2 lbs. boneless chicken breasts
3 slices boiled ham
3 slices part-skim Mozzarella cheese
Oregano
Garlic powder
Salt and ground pepper
12 oz. chicken broth
6 oz. tomato paste
3 tbsp. grated Romano cheese

Slice the chicken breasts into 6 equal pieces and flatten the pieces out. Cut each piece of ham and cheese in half and place one slice of each on top of each chicken piece. Sprinkle lightly with the seasoning and roll each piece so that the ham and cheese are in the inside. Arrange the 6 chicken roll-ups in a shallow baking dish, seam side down.

Combine the chicken broth and tomato paste with 1/4 teaspoon each of oregano and garlic and stir until smooth. Pour over the chicken. Sprinkle with Romano and bake at 425 degrees for 15-20 minutes. 6 servings.
