STUFFED FLANK STEAK | |
1 lb. sweet Italian sausage Flank steak 1 c. celery 1 c. onion 1 c. mushrooms 1/2 c. water 1/2 c. red wine Assorted spices to taste: basil, oregano, garlic powder, onion powder, salt, pepper 3/4 c. sauteed red or green peppers 1 1/2 c. good tomato sauce Saute celery, onion, mushrooms; mix with 1 pound sweet sausage, removed from casings. Dust steak with assorted spices; spread with vegetable-sausage mixture. roll and tie. Add 1/2 cup water to pan. Cook at 350 degrees 1 hour, then add 1/2 cup red wine to pan. Cook one more hour. Serve sliced steak with your favorite tomato sauce mixed with some sauteed peppers. Serves 4. Recipe can be doubled for company. Very special dinner! |
