PEACH MELBA 
1 can (29 oz.) peach halves or slices
1 qt. of French vanilla ice cream
1 pkg. of amaretto biscuits, crumbled
1 pt. of fresh raspberries or 1 bag frozen raspberries
1/2 c. sugar
1/4 c. orange juice
Whipped cream
Chocolate twigs or chocolate mint cookies

Prepare Raspberry Sauce: Puree raspberries with sugar and orange juice in blender or food processor. Set out 4 parfait glasses or dessert bowls. Sprinkle amaretto crumbs in bottom of each bowl. Layer some vanilla ice cream evenly into glass. Then add some peaches and pour 2 tablespoons of raspberry puree on to top. Repeat layer of ice and peaches. Top with raspberry sauce and a dollop of whipped cream. Stick a chocolate twig or chocolate mint cookie into cream for garnish. Makes an elegant refreshing dessert that serves 4.
