MANDARIN HAM ROLLS 
2 (11 oz.) cans mandarin oranges, drained
2 c. cooked rice
1/3 c. mayonnaise
3 tbsp. each chopped pecans, parsley & green onions
12 lg. slices boiled ham
1/2 c. orange marmalade
2 tbsp. fresh lemon juice
1/2 tsp. ginger

Reserve 12 orange sections. Toss together remaining oranges, rice, mayonnaise, pecans, parsley and green onions. Place a large spoonful of mixture in center of each slice of ham. Roll slices. Place seam side down in a baking dish just large enough to hold rolls. Combine marmalade, lemon juice and ginger. Brush rolls with this mixture. Bake at 350 degrees for 25 minutes. Garnish with reserved oranges. Serves 6.
