MAMA LU'S POTATO EGG ROLLS 
3/4 c. sugar
3/4 c. shortening
1 1/4 c. scalded milk
2 eggs
2 tsp. salt
2 pkgs. yeast dissolved in 3/4 c. warm water
1 c. mashed potatoes

Cream shortening, sugar, warm mashed potatoes, cooled. Beat in one egg at a time. Add salt to the 1 1/2 cups flour alternate with milk (warm). Pour in yeast (dissolved in water) and cover with wax paper after mixed in.

Let rise 1 1/2 hours. Then add 4-6 cups flour. Rise again. Roll out and cut with large mouth glass. Put a dab of butter and fold over. Place on greased cookie sheet. Rise and bake 10 minutes at 400 degrees.

May be put in refrigerator overnight for second rise.
