GREAT GRANOLA 
3 c. rolled oats
1/2 c. raisins
3/4 c. plus 2 tbsp. apple juice concentrate
3/4 c. wheat germ
1/4 c. unsalted soy or peanuts
1/4 c. unsalted sliced almonds or chopped walnuts
2 tbsp. raw sesame seeds
1 tsp. ground cinnamon or to taste

Preheat oven to 350 degrees.

Spread the oats in a non-stick baking pan 11 x 9 inches or larger. Toast in the oven for 10 minutes. Remove from oven and reduce heat to 300 degrees.

Combine the raisins, 1/2 cup of the juice concentrate in a small saucepan. Bring to a boil. Reduce heat, simmer for 5 minutes. Drain, reserving the liquid and raisins separately.

Add the raisin liquid and remaining ingredients (except the raisins) to the oats, combine well with a wooden spoon. Return the pan to the oven and toast for 20 minutes, stirring twice during baking.

Stir in the raisins well and press the mixture firmly into the pan. Bake another 5 minutes. Let cool to room temperature. Break up granola and store in a tightly covered container.

Makes about 5 cups. 1/2 cup = 1 1/2 whole grain serving. 1/2 cup protein serving. 1/2 other fruit serving.
