CARROT CAKE 
2 c. sugar
1 1/3 c. Wesson oil
4 eggs
2 c. self-rising flour
2 tsp. cinnamon
1 tsp. vanilla
1 1/2 tsp. black walnut flavoring
2 c. grated carrots
1/2 c. chopped black walnuts

Mix sugar, oil and eggs. Add rest of ingredients and mix well. Bake in bundt cake pan that has been well greased and floured. Bake at 350 degrees for one hour. Remove from pan and pour cake topping over top.

CAKE TOPPING:

1/2 c. buttermilk
1/2 tsp. baking soda
1 tbsp. white Karo syrup
1 c. sugar

In a small pan, put buttermilk and stir in baking soda. Add white Karo syrup and sugar. Stir constantly, bring to a boil. Pour over cake while hot.
