NINI'S EGGPLANT 
1 eggplant
Mayonnaise
Parmesan cheese
Salt
Pepper
Garlic salt
Paprika

Slice eggplant lengthwise into 1/4 inch plus slices. Sprinkle with salt on both sides and place in strainer for 20 minutes. Wash eggplant and pat dry. Place on greased cookie sheet. Onto each piece place a healthy tablespoon of mayonnaise. Sprinkle seasonings and cheese on top. Place under broiler, about 6 inches from top, for approximately 5 minutes. Eggplant is cooked when tender and golden brown. Kids love it!
