BROCCOLI CASSEROLE 
3/4 c. chopped roasted peanuts
2 (10 oz.) pkgs. frozen chopped broccoli
1 c. grated sharp cheddar cheese
1 med. onion, chopped or 1 1/2 tsp. dry onion flakes
1 can cream of mushroom soup
1 c. mayonnaise
2 eggs, beaten
1/4 c. butter, melted
2 c. dry bread crumbs

Cook broccoli with salt and drain. Add soup, mayonnaise, and chopped peanuts. Mix together thoroughly. Add eggs and onions. Pour butter over bread crumbs. Pour broccoli mixture into greased 1 1/2 or 2 quart casserole dish. Sprinkle with grated cheese and top with bread mixture. Bake at 350 degrees for 30 minutes. Makes about 6 to 8 servings.
