BROCCOLI CASSEROLE 
1 lb. broccoli spears or chopped broccoli
1/3 c. chopped onions
1 can cream of chicken soup
2 slightly beaten eggs
3/4 c. mayonnaise
1 c. crushed Ritz crackers
1 c. Cheddar cheese

Cook broccoli until tender. Drain. Place cooked broccoli into buttered casserole dish. Sprinkle chopped onions over the broccoli.

In a separate bowl, mix the cream of chicken soup, mayonnaise and eggs. Pour this mixture over the broccoli and onions. Bake at 350 degrees for 25-30 minutes. Remove from oven and sprinkle with the cracker crumbs.

Grate 1 cup of Cheddar cheese and sprinkle over the top of the dish. Bake for 5 minutes or until the cheese is melted. Serve.
