BROCCOLI/CHICKEN CASSEROLE 
4 chicken breasts, boned, halved, and pounded thin
Italian bread crumbs
3 tbsp. butter
2 (10 oz.) pkgs. broccoli, chopped
1 can cream of mushroom soup
1 c. mayonnaise
2 eggs, well beaten
1/2 pkg. onion soup or 4 tbsp. diced onion
1/2 c. Ritz crackers, crushed
4 tbsp. butter
8 oz. pkg. Cheddar cheese

Coat chicken with bread crumbs. Brown in 3 tablespoons butter. Cook broccoli for 5 minutes; drain. In separate bowl, combine soup, mayonnaise, eggs, and onion. Mix well and add broccoli. Layer chicken in greased baking dish. Spoon broccoli mixture over chicken. Dot with 4 tablespoons butter. Sprinkle cheese and cracker crumbs over broccoli. Bake at 350 degrees for 30 minutes. Serves 4.
