BEET PICKLES 
1 gal. sm. beets
2 c. sugar
1 long stick cinnamon
1 tsp. salt
1 tbsp. allspice
3 1/2 c. vinegar
1 1/2 c. water

Cook and skin beets. Add sugar and spices to vinegar and water. Simmer 15 minutes. Add beets. Boil 5 minutes. Pack beets into hot jars. Cover with boiling syrup. If not enough syrup to cover beets, add more vinegar. Process 30 minutes in hot water bath.
