SWEET POTATO SOUFFLE 
3 C mashed potatoes
1 C sugar
3 eggs
1/2 C milk
1/2 stick butter
1 tbsp. vanilla
1/2 tsp. salt
1/4 tsp. cinnamon

TOPPING:

1 C brown sugar
1/2 C butter
1/2 C flour
1 C chopped pecans

Mix potato ingredients. Pour into baking dish. Make topping and place over top.

TOPPING: Mix all topping ingredients by hand and spread over potato mixture.

Bake at 350°F until top is light brown.
