POPPY SEED CHICKEN 
6 to 8 cups cooked, diced chicken
1 c. sour cream
1 can cream of chicken soup
1 can cream of mushroom soup
Butter crackers (i.e. Ritz)
1 c. melted butter
2 tbsp. poppy seeds

Mix first four ingredients and place in baking dish. Crush crackers and mix with melted butter and spread on top of chicken mixture. Cover with poppy seeds. Bake 30 minutes at 350 degrees, uncovered. Freezes very well.
