BANANA WALNUT MUFFINS 
1/2 c. softened butter (OR canola oil)
1 c. sugar
1 tsp. vanilla
3 to 4 ripened bananas
3/4 c. flour
3/4 c. whole wheat flour
1/2 tsp. salt
3/4 tsp. baking soda
1/2 tsp. nutmeg
1 1/2 tsp. cinnamon
2 eggs
1 c. walnuts or pecans

Blend first 4 ingredients. Add remaining and mix until blended. Fill paper muffin cups with batter and bake 20 to 25 minutes at 350 degrees. This is a family favorite; my children have been making these muffins since they were in preschool. Easy and good!

This recipe turned out delicious. Will use this recipe again, but with a little less sugar. Came moist. Baked 25 min. Used canola oil instead of butter. Added 1/2 tsp. of baking powder & stuck with the original ingredients of 3/4 c. flour & 3/4 c. of whole wheat flour. Also added eggs with the wet & gently folded the wet into the dry.

Good, but easily improvable.
1) Cream butter and sugar first.
2) Add the eggs with the wet (with the creamed mixture, vanilla and bananas)
3) Mix all the dry ingredients seperately. Fold into the wet gently and minimally to prevently hardness-causing gluten from developing.
4) Use 100% whole wheat flour, it compliments the nutty flavor of the walnuts.
5) Before putting in the oven, put a pinch of light brown sugar on top of each muffin. It'll carmelize and REALLY compliment the banana flavor.
