CHOCOLATE CHIP MINT COOKIES 
3/4 c. (1 1/2 sticks) butter or combination
1/2 c. packed brown sugar
1/2 c. granulated sugar
1 egg (I use white only)
1 tsp. vanilla extract
1 tsp. peppermint extract
1 1/2 c. unbleached flour
1/4 c. unsweetened cocoa
1 tsp. baking soda
1/4 tsp. salt
1 c. chocolate chips

Preheat oven to 350 degrees. Lightly grease cookie sheet. Cream butter and sugars on high speed. Beat in egg. Stir n vanilla and peppermint extracts. Sift together dry ingredients and add to butter mixture along with chocolate chips. Stir until well combined.

Drop by rounded teaspoons onto cookie sheet. Bake 10-12 minutes at 350 degrees. (Don't overbake.) Remove immediately and cool on wire rack.

NOTE: Don't try to cut the sugar or butter, I did and they're just not the same! Sorry - these are not meant to be eaten weekly!
