POTATO CANDY 
1/2 tsp. vanilla flavoring
1 sm. white or red potato
Powdered sugar
Peanut butter

Boil potato until tender; drain off water. In small mixing bowl mash potato, add powdered sugar and vanilla until thick paste. On laid out wax paper roll out paste, until about 1/4 inch thick until flat. Spread peanut butter on top of paste, as thick as you like or about 1/4 inch thick. Starting at one end of paste, roll up paste and peanut butter into a log. Chill. Slice into 1/2 inch bars. Makes about 20 slices.
