CHOCOLATE ZUCCHINI CAKE 
2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. nutmeg
1/4 c. cocoa
3 eggs
2 c. sugar
1/2 c. oil
3/4 c. buttermilk
3/4 c. shredded zucchini
1 tsp. vanilla
1 c. walnuts (optional)

Stir first 7 ingredients together in a medium size bowl. Beat eggs and sugar together until light and fluffy. In large bowl, blend buttermilk, zucchini, and vanilla. Add flour mixture to this. Pour into greased and floured pan. Bake at 350 degrees for 50-60 minutes. Top with cream cheese frosting.
