ZUCCHINI LOAF CAKE 
3 eggs
2 c. sugar
1 c. oil
1 tsp. vanilla
1 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. baking powder
2 c. grated zucchini
3 c. flour
Walnuts

Beat eggs until foamy, add sugar, oil and vanilla. Sift dry ingredients, blend in with mixture. Add zucchini and nuts.

Bake at 350 degrees for 1 hour and 20 minutes in 2 loaf pans.
