BEEF-VEGETABLE LOAF 
2 lbs. ground beef
2 c. soft bread crumbs
1/2 c. shredded carrots
1/4 c. sliced celery
1/4 c. chopped onion
1/4 c. chopped green peppers
2 eggs
1 tsp. dry mustard
1 tsp. parsley flakes
1 1/2 tsp. salt
1/2 tsp. pepper
1 (16 oz.) can tomatoes, chopped and drained
1/4 c. catsup
1/2 c. water

Combine first 12 ingredients, mixing well. Place mixture in a 13 x 9 x 2 inch baking pan and shape into a 10 x 6 inch loaf. Pour catsup over meat loaf, add water to pan. Bake at 350 degrees for 1 hour and 15 minutes, basting occasionally with drippings. 8 servings.
