CHICKEN PARMIGIANO 
4 chicken breast halves, boned & skinned
1 c. dry Italian-style bread crumbs
1/4 c. olive oil for sauteing
1 (15 1/2 oz.) jar of your favorite spaghetti sauce
1/2 c. grated Parmesan cheese
1 c. shredded Mozzarella cheese

Preheat oven to 400 degrees. Rinse chicken breasts with cold water and dip in bread crumbs coating thoroughly. Heat oil in medium skillet on medium high heat. Saute chicken on all sides until chicken is browned and just barely cooked through. (You may have to lower heat to medium to prevent coating from getting too dark.) Remove from heat.

Pour spaghetti sauce into an 11 x 7 x 2 inch baking pan. Place chicken in sauce and top with Parmesan and Mozzarella cheese. Bake in preheated 400 degree oven for 15 minutes or until cheese is melted and lightly brown.
