BEEF IN VINEGAR SAUCE | |
BEEF MIXTURE: 3/4 lb. flank or round steak, cut across grain into 1/8 x 2 inch strips 1 tbsp. cornstarch 1 egg white 4 tbsp. vegetable oil 1 tsp. minced ginger 2 stalks green onions, cut finely, 1/4 inch pieces SEASONING SAUCE: 4 tbsp. soy sauce 4 tbsp. cider vinegar 2 tbsp. dry sherry 1 tsp. sugar 1/4 tsp. salt 1/2 tsp. sesame oil Heat 2 tablespoons of oil, using high heat, and stir-fry beef mixture for a minute. Remove and drain. Heat 2 more tablespoons of oil and stir-fry ginger and green onions until ginger becomes golden. Add sauce mixture and cooked beef mixture. Stir-fry additional 15 seconds. Add sesame oil and mix well. Serve hot. |
