PICKLED ZUCCHINI 
4 quart sliced zucchini
6 whole onions, sliced
2 green peppers, sliced
2 cloves garlic
5 c. sugar
1 1/2 tsp. turmeric
1 1/2 tsp. celery seed
2 tsp. mustard seed
3 c. vinegar
2-3 tbsp. salt

Do not pare zucchini, wash and slice zucchini, onions and peppers in 1/2" slices. Add garlic and salt; mix thoroughly. Cover with cracked ice. Let stand 3 hours. Mix and drain ice water. Combine remaining ingredients. Pour over zucchini mixture. Heat to a boil. Sterilize jars and seal. Approximately 8 pints.
